12:58 a.m. - Wednesday, Apr. 25, 2007 mix the honey in te water, (you are supposed to boil it 15 min, but after the pot boiled over, i said screw it) you have to mix the water and honey pretty well, you want it all disloved. (a side note you are also supposed to use a whole lot more honey, but i didn't know that at the time) once the honey in disloved in the water, pour the yeast into a glass of clorine free water, and then into the carboy. put the fermentation lock on it, and wait. this produced a yeasty white wine flavor. and really stong, the yeast went after all of the sugar that was avaible, i think that's why you are supposed to use more honey.... but i like it. for my next bottles i'm going to mix rice, barley, honey and the very same yeast... once i get another carboy since i sort of broke the last one when i was cleaning it out... (turns out the carboy handle thingy i had, wasn't for that size carboy, my bad) np: despactios, the happyist place on earth their straightening those amber waves, purple majesty
